Very earthy, and distinctly different from Kyoto Distillery’s first release, Ki No Bi. There is a very clear nose and taste of green tea in this one, followed by an earthy truffle/mushroom note, and a bit of sweet juniper akin to walking through a damp forest on a spring day. As with Ki No Bi, the base spirit of this gin is rice-based, and the makers draw from an excellent water quality to find an overall harmony that gives a unique identity and sense of Japanese gin terroir.
